She Only Eats Eggs

I should have called this blog When I Grow Up I’ll Only Make Eggs.

Partly because it’s true.

I do make other stuff. I have the ability to create lots of pretty, delicious food. But I don’t want to eat the same thing for a solid week.

So when I’m feeling lazy and want something good to eat that will keep me full, I make eggs. Omelettes, scrambled eggs, fried eggs.

When I started writing this, I had every intention to create new and exciting recipes. But true to form, I’ve only posted pictures of eggs.

Let’s not change things up now.

An omelette with cherry tomatoes, orange bell pepper, shallots, power greens, lots of white cheddar cheese and salsa.

Breakfast for dinner. My favorite way to have breakfast, unless it’s Sunday brunch.

But after work today, I stopped by my favorite coffee shop, and I picked up one of their ridiculously delicious brownies.

I had that and a nap directly after work. And I consider that to be a golden opportunity. Brownies and naps. Perfection.

And don’t worry about the eggs. I will start making other stuff once it gets cold outside. Soups, chili, casseroles, chicken pot pies. But I’m sure there will be more breakfast treats in there, too.

The Runner’s Breakfast

It’s Saturday. And I ran this morning.

In an effort to curb my hunger pang, I made an omelette. And you know how much I love an omelette. But as all hunger driven, rushed breakfast fixin’ times in my life, my creation did not turn out very pretty.

But was it incredibly delicious? YES!

When I was thinking about breakfast this morning as I sipped my hazelnut coffee, I decided I wanted an omelette with ham. I never choose ham. It’s just not my favorite. But sometimes when I crave eggs, I want to throw some ham in there.

What you need:

  • 2 eggs
  • 2 thin slices of Black Forest ham
  • 1/4 bell pepper, color of your choice
  • 1/2 shallot
  • Kerrygold butter
  • White cheddar cheese, shredded
  • Salsa
  • Avocado
  • Salt and pepper

Saute the bell pepper and shallot in melted Kerrygold butter until softened. Dice up the ham, and throw it in there. Let it cook together for a few minutes so the flavors combine. Salt lightly, pepper liberally. Scramble up your eggs with a little half and half. Pour over the ham and veggie mixture. Cook until eggs are the consistency you like. Add cheese, and let it get melty.

Plate it up, and top it with your favorite salsa and half an avocado. Or whatever toppings you like.

The salty ham is so delightful with the eggs. And I can tell you my breakfast was gone in a matter of bites. When I run longer distances, I feel famished. And this morning was no different. So the protein of the eggs and ham hit the spot.

There’s a good chance I will make another one for lunch today. It’s just that good.

Vacation Detox

My favorite vacations center around big bodies of water.   I love the beach. It’s my happiest place. I say that because I find happiness in lots of places. But the beach is a different level. 

In the days before I left for vacation, people made comments about me glowing with excitement. Hands down, one of the best compliments. 

Glowing. 

I was buzzing in my skin. Because I could wake up to this for seven days.  And my best friend got to go with me.  See, my happiest place. 

And it was full of donuts, seafood, crab-stuffed this and bernaise covered that. So much good food. 

And only one barefoot run in the sand before dawn, which was totally awesome and exactly what my soul craves.   So by the time I got home yesterday, I knew I had to detox my body from the richness of vacation. 

And so it began with breakfast.   A beach-inspired breakfast bowl. All you need is one sliced up banana, two or three heaping spoonfuls of plain Greek yogurt, handful of raspberries, blueberries and strawberries.

I’ll admit the plain yogurt is a tough one to go with, but there is enough natural sweetness in the fruit to balance it nicely. Plus you nix the added sugar in the flavored yogurts. Win. 

Lunch was on the go today. So I ordered a chicken sandwich from the place downstairs from my office. The potatoes chips didn’t help the detox, but I made up for it at supper.   Behold, the ultimate detox salad. 

  • Romaine lettuce
  • Red bell pepper
  • Yellow cherry tomatoes
  • Cucumber 
  • Half an avocado
  • Two boiled eggs
  • Your favorite dressing

Simple and delicious. 

And it’s just an added bonus that it will cleanse my system from vacation food. I only wish I could have kept the beach a little longer. 

BLT Egg Scramble

I love eggs.

They are one of the most versatile ingredients to cook. And they keep me fuller for a longer period of time. Unlike pancakes, which make me miserable and hungry again in like an hour.

And I use to make omelettes all the time. But I’d get impatient and try to flip it too soon, so I’d call my mess-up omelettes egg scrambles.

But after many messed-up omelettes, I decided egg scrambles were easier and just as much delicious.  Plus you can put whatever you want into the scrambled eggs, mix it up and call it breakfast.

Behold the beauty of the BLT Egg Scramble.

  • 2 eggs
  • A splash of half and half
  • A few slices of bacon
  • Cherry tomatoes
  • Fresh basil
  • Cheddar cheese
  • Avocado
  • Salt and pepper

Crisp up the bacon. I went extra crispy because I wanted to give the eggs a little texture. While the bacon is cooking, half your cherry tomatoes, chop up your basil and scramble your eggs with a little half and half, salt and pepper.

Put a little butter in a pan, and throw the tomato halves in there to let them soften a tad. Don’t let them get mushy though. Pour the eggs into the pan with the tomatoes, and cook slowly. Crumble the bacon and stir into the eggs.

Once the eggs are almost to the point of done, toss in the chopped basil and cheddar cheese. Let things get melty.

Transfer to bowl or plate. Top with a little extra cheddar and avocado.

And then all your breakfast dreams will come true when you take the first bite.

Bacon for Breakfast

I love bacon. I rarely eat it, but I love it.

It get so crunchy when you cook it. Or at least, my bacon get crunchy when I cook it. I don’t like floppy bacon. Crunchy bacon, FTW.

The other night my mom told me she was going to make BLTs for supper, and I thought that sounded delicious. So I went to the store and bought some bacon.

And buying that bacon was one of the best decisions I made all week.

It’s been Bacon Fest at my house all week. BLTs. B4D, also known as breakfast for dinner. Bacon, turkey wraps. Bacon by itself. Because we all know bacon can stand alone beautifully and deliciously.

But it’s very rare that I will make bacon for breakfast at breakfast time. I’m a complicated woman, but it’s really simple. I wake up. Make coffee. And once all brain cells are properly caffeinated, I want a quick and easy breakfast.

And bacon breakfasts take more time than I want to give it. But today was not the case.

I went for a run and came home to a lazy Saturday morning. No plans other than going to the pool to soak up some sun and enjoy this perfect weather we are having today.

I thought hmmmm breakfast…what shall I have?

Bacon and eggs.

The true Southern girl that I am fried up some bacon and then fried the eggs in the leftover bacon grease. Like. A. Boss.

I did say this blog was about healthy, delicious food. But I’m a real person. I sometimes fry my eggs in bacon grease like my Momma taught me. So I thought I’d break the ice and show you I eat food that your doctor, nutritionist or granola-eating, health-nut friend would frown upon.

For breakfast this morning:

  • Two fried eggs
  • A couple slices of bacon
  • Organic baby tomatoes for the Bernice Garden Farmers Market
  • Organic, locally grown blackberries

It’s all about balance. And giving into your bacon cravings every now and then.
